Co-owner Bill Adams, who made a name for himself with his Medina Salsa Co., said the plan is to open the restaurant, 665 Lafayette Road, by the end of the month.
The owners are all from Medina. Adams is the business manager. Tom Bowser, a former heavyweight wrestler at Medina High School, is the chef. The Air Force veteran spent 20 years in the security business. The third owner, Scott Sorrell, is the jack of all trades. He’s a retired school teacher.
They purchased the old Lantern restaurant several months ago and have gutted the place. Everything that could be renovated was replaced, including the walls, flooring and ceiling in the restaurant that was built in 1900, according to the Medina County Auditor’s Office.
Adams said the building had been vacant since the Lantern closed four years ago.
As far as producing quality food at affordable prices, Adams said: “We’re like Walmart. We want to do volume — quality volume.”
For example, two all-beef hot dogs, fresh-cut fries or a cup of chili, and a drink will cost $4.99.
The restaurant also will sell Medina Salsa Co. salsa and relish. Adams said the salsa placed first in the Fabulous Food Show in 2014, 2015 and 2016 on cable’s Food Network.
It’s already sold at Buehler’s Fresh Foods, Giant Eagle and Drug Mart. They also got the word out at many farmers markets, including the one on Public Square.
“The relish can go on anything,” Adams said.
Eventually, Adams said he’d like to expand the menu, which can be viewed at diner-42.com.
Adams’ favorite sandwich is the Italian beef au jus. That combo meal will cost $5.99.
“I hate food with no flavor,” he said.
He said the owners have attempted to produce food that will excite taste buds. Even the “kicked-up” ketchup has a bite to it.
Operating the restaurant will be a family affair. The owners and their families will be the work staff. Adams’ son, Kyle, is a culinary student at the Medina County Career Center. He will prepare his specialty, a Sunday breakfast.
Diner 42 will be open 10 a.m. to 9 p.m. Monday through Thursday, 10 a.m. to 11 p.m. Friday, 10 a.m. to 10 p.m. Saturday and 9 a.m. to 5 p.m. Sunday.
Occupancy is listed at 50 to 75 people, and Adams said there are 20 parking spots in the wrap-around lot.
He said he’ll eventually expand the front porch by
10 feet, which could feature outside dining, and he’ll soon put up his LED sign that features 30 messages.
Adams said the owners are passionate about “our small-town community,” and added the restaurant will have a
family-friendly atmosphere featuring a Medina d￩cor.
Alcohol will not be sold.
